I love haloumi cheese and until recently I’ve only seen expensive imported packs in the upmarket supermarket in Chiang Mai. But now there is a locally made source which is great I bought this halloumi directly from the producer at the new Friday Chiang Mai Farmers’ Market which is a great place to shop for fresh organic produce. They also have bands playing and ready-made food for sale, well worth checking out on a Friday afternoon! I bought this a few weeks ago and hadn’t got round to using it until yesterday. One my griddle pan I first grilled some courgettes (FTG) and then grilled the Haloumi. I chopped up a spring onion and some cherry tomatoes (FTG) and mixed these with the cheese and courgettes and some mint leaves, a squeeze of lime juice and some freshly ground pepper and served it on a bed of salad leave (FTG). Really easy and super tasty and refreshing!
