‘Anchan’ flowers or Siam Butterfly Pea flowers make a refreshing a vividly coloured drink. They’re said to be good for your hair, eyesight and immune system too. I came across some beautiful anchan flowers in the market this morning and couldn’t resist buying them.
I brought them home and put them in a pan with about two liters of water and about 60 g of sugar and heated this up so the colour came out of the flowers and the sugar dissolved and then turned off the heat. I squeezed the juice of a couple of limes and add this to the juice bit by bit until I got the right balance of flavours and then strained it into a jug and served with ice and a slice of lime. It’s very refreshing. It also makes a good mixer!
